I made a cheesecake!!!!!
For quite some time now, I really wanted to make a cheesecake but I never had any cashews to spare (and was quite unsure about the cashew cheese substitute), and although I went out and bought coconut cream the one cashew-less receipe I found required agar which surprise surprise I also did not have.
Next thing you know, I am seeing a whole lot of cashews suddenly appeared in the pantry and before anyone could stop me, I took a *few* and soaked them overnight :) :)
Fast forward to the next day and this is what I created:

Initially, I was going to make a mango flavoured cheesecake this weekend (after the plain coconunt and lime one worked so well) and I could combine them both in a blogpost, however I got lazy and didn't make it in the end. So I decided to just post this one for now. Perhaps i'll edit this post when I make the other one.
Hence those cheesecake photos are a few weeks old now.
In other news, my uni has been holding "crafternoon" sessions where for the past month, for every Tuesday they have crafting sessions for the uni's union members. I went along to 2 of them, and this is what I made:

The terrarium was the first one I made and it was so simple! Sure the container is very likely too big but it was quite fun. Simply layering some soil and stones, and finishing it off by adding a succulent at the top.
The flower crown on the other hand took me HOURS!! The 1 hour crafternoon session was definitely not enough. Last night I ended up starting on it at around 12am (yes midnight flower crowning is what I do) and I kept going until about 4am :p whoops? hehe
I actually quite like it as a decoration piece for my table lamp
(which I never actually use mainly because it turns on and off through sensors and usually keeps turning on and off regardless of how much movement there really is yeah don't ask...)
It really adds some colour to my otherwise plain coloured room.
This was definitely some good stress less activity before exams!! (And to end a stressful week). We're back at it again from tomorrow.

DeleteIt was pretty creamy, you couldn't taste the coconut or cashews at all. It had a nice lemony taste as well.
Others told me that it tasted quite different to cheesecakes made from cream cheese though. I think this is much lighter.
